I met Chris Cosentino a few years ago at his restaurant Jackrabbbit in Portland, OR. I was having dinner with some of my friends from Chris King Precision Components, and they were friends, and so I got introduced to the guy while eating a plate of crispy pork belly, with no clue at all that he was a big name in the cooking game.
As it turns out, he was friends with the Chris King crew because he also loves to ride bikes, which works nicely, because Chris King, the guy, is something of a gourmand.
Anyhoo.
Here’s a video called Food I Think About When I Think About Cycling, which echoes the Haruki Murakami book What I Talk About When I Talk About Running, which is a real fine read, if you’re a runner. In it, Cosentino is riding in San Francisco. I’ve been lucky enough to do that spin from the city, over the Golden Gate, and up into the Marin headlands, and I can confirm, it’s amazing. He’s also talking about food, which I like, because food tastes good.
